Oatmeal cake with cruchy toppin
- 1/2 cup butter
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 1 1/2 cup self rising flour
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup mashed banna
- 1 cup cooked oatmeal
- 1/4 cup 1/2 stick butter
- 1/3 cup evaporated milk
- 1/2 cup brown sugar
- 1/2 cup uncooked oats
- 1/2 cup unsweetened coconut flakes
- 1/2 cup chopped walnuts
- pre heat oven too 350.
- coat a 9 inch springfoam pan or a 13 x 9 baking dish with cooking spray
- to prepare cake, beat butter until fluffy.
- Add sugar and beat well.
- Add eggs,one at a time,and vanilla; beat well.
- Add flour,cinnamon & salt, beat until just combined.
- Stir in banana and cooked oatmeal.
- Spread batter in pan.
- Bake about 35min.
- Remove cake from oven.
- Heat broiler.
- Too prepare topping, melt butter in saucepan.
- Add milk & brown sugar, stir well.
- spread over warm cake.
- Place under broiler and broiler until browned & bubbly, about 4min.
