Shrimp & Mango Ceviche
- 2 pounds Peeled And Deveined Cooked Shrimp
- 1/2 cups Red Onion, Sliced
- 1 Tablespoon Capers
- 1/4 cups Cilantro, Chopped
- 1 whole Mango, Peeled, Pitted, And Diced
- 1/2 cups Olive Oil
- 1/4 cups Vinegar
- 1 whole Lemon, Juiced
- 1 teaspoon Sugar
- 2 ounces, fluid Caper Juice
- 1.
- Whisk all of the dressing ingredients together in a bowl.
- In a big bowl add the shrimp, onion, capers, cilantro and mango.

- Toss the dressing in with the shrimp.
- 3.
- Let it marinate in the fridge for a minimum of 2 hours.
