Fried Eggplant and Ground Pork

  1. Blanch eggplant in boiling water for 30 sec.
  2. Remove.
  3. Heat oil and stir-fry garlic, chili and soy condiment until fragrant.
  4. Add pork and stir-fry until colour changes.
  5. Add eggplant, then sauces and sugar.
  6. Stir to mix.
  7. Finally, add basil and stock and bring to boil.
  8. Serve immediately.
