Good Morning Sandwich
- 2 slices bread whole wheat or whole grain
- 2 tablespoons basil pesto basil or any your favorite flavor
- 1/4 each cucumbers washed, peeled if needed, slice into 1/4-inch rounds
- 1/2 each sweet red bell peppers, roasted slice into strips
- 2 each artichoke hearts marinated, drained and sliced
- 1 each lettuce leaves torn into pieces, or any your favorite greens
- Spread 1 tablespoon of basil pesto on each slice of bread.
- Top one slice with cucumber rounds, roasted bell pepper strips, artichoke hearts and lettuce.
- Place the other slice on top, and press to form a sandwich.
- Serve.
