Serrano Pineapple-Papaya Smoothie

  1. In a liquid measuring cup or small bowl, whisk together the pineapple juice and chiaseeds and let stand for about 20 minutes.
  2. (Makes 1 1/8 cups pineapple-chia gel.)
  3. Place the pineapple-chia gel, papaya, cucumber, serrano pepper, lime juice, oil, ginger,and salt in a blender.
  4. Cover and puree until smooth.
  5. Pour into two chilled martini or other beverage glasses.
  6. Garnish each with a cilantro sprig and serve.
