Shrimp-shell Miso Soup
- 6 to 8 heads Shrimp heads (botan shrimp, amaebi, etc.)
- 1 Green onions
- 3 tbsp Miso
- 1 tbsp Sake
- 400 ml Dashi stock
- Sashimi-ready shrimp is fine.
- In our house we usually eat the bodies as sashimi, and use the heads for this miso soup.
- Put the dashi stock in a pan and heat.
- Put in the shrimp heads and sake.
- Skip off the scum carefully.
- Dissolve in the miso.
- Sprinkle with chopped green onions just before serving.
- Done!
