Shrimp-shell Miso Soup

  1. Sashimi-ready shrimp is fine.
  2. In our house we usually eat the bodies as sashimi, and use the heads for this miso soup.
  3. Put the dashi stock in a pan and heat.
  4. Put in the shrimp heads and sake.
  5. Skip off the scum carefully.
  6. Dissolve in the miso.
  7. Sprinkle with chopped green onions just before serving.
  8. Done!
