Rice Salad

  1. Put cooked rice in a large mixing bowl and add in all the raw vegetables; carrots, red and yellow peppers and tomatoes and raisins.
  2. Add in good olive oil and mix well.
  3. Season with curry powder, tumeric powder and chili powder and mix well.
  4. Add in salt to taste and mix.
  5. Add the roughly chopped coriander (lots of it!)
  6. and give a good final splosh of olive oil.
  7. Mix until every grain is coated with the seasoning.
  8. Chill and serve.
