Ay Chuhuahua Soup Recipe
- 1 Tbsp. Roasted garlic puree
- 1 Tbsp. Diced red onion
- 1 Tbsp. Sliced scallions
- 1 Tbsp. Diced yellow onions
- 1 Tbsp. Diced red peppers
- 1 Tbsp. Diced green peppers
- 1 Tbsp. Diced yellow peppers
- 1 tsp Cumin
- 1 tsp Grnd Mexican oregano
- 1 lb Chorizo sausage, cooked and crumbled
- 2 quart Heavy cream
- 2 c. Chicken or possibly vegetable stock
- 1 c. Shredded jalapeno
- 1 c. Shredded Chihuahua cheese, plus more for garnish
- 1 tsp Cornstarch
- Into a four qt stock pot, add in roasted garlic, onions and peppers.
- Sweat vegetables till soft.
- Add in spices.
- Let contents cook for five min.
- Add in chorizo sausage, heavy cream, and stock.
- Cook for 45 min.
- Add in jalapeno peppers and cheese and cook for five min.
- Add in cornstarch and let cook till desired level of thickness is reached.
- Serve.
- Yield: 8 servings
