Diabetic Marshmallow Creme

  1. Sprinkle gelatine over cold water, letting set for 5 minutes.
  2. Add to boiling water, cook and stir until dissolved.
  3. Remove from heat and cool to the consistency of thick syrup.
  4. Stir in fructose and vanilla.
  5. Beat egg whites into soft peaks.
  6. Very slowly trickle a small stream of gelatine mixture into egg whites, beating until all gelatine is blended.
  7. Continue beating until light and fluffy.
  8. Pour into a lightly greased and floured 13 inch x 9 inch pan, spreading evenly.
  9. Refrigerate until set and then cut to desired size.
