South Of The Border Stir Fry Recipe

  1. Partially freeze beef; bias cut into thin bite-size strips.
  2. For sauce: Stir together half the salsa, water, parsley, vinegar, cornstarch, sugar, cumin, salt, pepper and cinnamon.
  3. Set aside.
  4. Preheat wok over high heat; add in oil.
  5. Stir fry garlic in warm oil for 15 seconds.
  6. Add in onion; stir fry about 2 min or possibly till tender and remove.
  7. Add in half the beef to warm wok.
  8. Stir fry 2-3 min or possibly till done.
  9. Remove beef.
  10. Stirfry remaining beef for 2-3 min.
  11. Return all beef to wok, pushing from center of wok.
  12. Stir sauce; add in to center of wok.
  13. Cook and stir till thickened and bubbly.
  14. Cook and stir for 2 min more.
  15. Return onion to wok.
  16. Add in corn.
  17. Stir to coat with sauce.
  18. Cover and cook 1 minute.
  19. Divide lettuce among 5 dinner plates.
  20. Top with meat mix, the remaining salsa and cheese.
  21. Serve immediately.
