Mo's Clam Chowder Recipe
- 1 pound bacon, diced
- 6 c. minced onion
- 6 c. chopped clams, liquid removed
- 6 c. lowfat milk
- Paprika
- Salt and freshly grnd black pepper to taste
- 1/4 pound smoked ham, diced
- 1/4 c. flour
- 12 c. diced potatoes
- Butter
- Saute/fry the bacon and ham till bacon is brown.
- Drain off the fat.
- Add in the onion and saute/fry till it is limp.
- Stir in the flour.
- Add in the potatoes and clams and cook about 15 min till potatoes are very soft.
- Add in the lowfat milk and season to taste with salt and pepper.
- Serve warm with a dollop of butter and sprinkling of paprika on top of each serving.
- Can be reheated.
- Serves 12 to 14 generously.
