Red Chard Bruschetta
- 1 whole Shallot, Diced
- 1 clove Garlic, Minced
- 2 whole Anochovies (or 1/2 Teaspoon Anchovy Paste)
- 3 Tablespoons Olive Oil, Divided (1 For The Pan, 2 For Brushing The Bread)
- 2 bunches Red Chard, Cleaned And Chopped
- 1 teaspoon Red Wine Vinegar
- Pepper
- 1 whole Baguette Cut Into 1 Inch Slices
- 1/2 cups Crumbled Feta Cheese
- Add shallots, garlic, and anchovies to a large pan with 1 tablespoon olive oil.
- Saute over medium heat for one minute.
- Add chard and continue to saute, stirring occasionally.
- Once the chard is wilted down and soft, remove from heat and add in the splash of vinegar.
- Add pepper and test for salt (anchovies can be salty).
- Add salt if needed.
- Brush slices of bread with remaining olive oil and toast under the broiler for 30 seconds on each side.
- Add a nice pile of greens on top and sprinkle with feta cheese.
- Pop back under the broiler for another 30 seconds to brown the cheese slightly.
