Orange Chicken Spring Rolls

  1. Most of your time will be spent in prep time.
  2. Once everything is prepped, you just roll them up and eat them!
  3. Hydrate noodles according to package directions.
  4. I just boil some water, turn it off and throw the noodles in for about 57 minutes.
  5. Then drain.
  6. Wash lettuce leaves and cut ends off, they should be about 5 long.
  7. Wash cilantro and carrots, then slice carrots.
  8. Wash and dice green onions.
  9. Prepare orange sauce while doing all the prep cutting.
  10. If you are making your own homemade orange sauce, put all the sauce ingredients (except the cornstarch) in a pot and bring to a boil.
  11. Then add the cornstarch and water mixture to thicken.
  12. Now its rolling time!
  13. Have a pot or pan with really hot water at your assembly line.
  14. Dip your rice paper wrapper in the hot water and have a little water down on your clean prep surface.
  15. After dipping the paper, be careful because it will stick to itself; lay flat on the work surface.
  16. Start by putting one lettuce leaf in the center of the paper, top with about 5 carrot pieces, a couple sprigs of cilantro, about a teaspoon of green onions, about 1/4 cup of chicken, about a 1/2 cup of rice noodles and top with approximately 1 tablespoon of orange sauce.
  17. Then roll up to look like an egg roll.
  18. You can serve immediately.
  19. They are actually really easy to make and taste FABULOUS!
