Bacon-Wrapped Jalapeno Poppers

  1. Slice jalapenos in half lengthwise and remove seeds and membrane.
  2. Fill cavity with softened neufchatel cheese.
  3. Cut slices of bacon in half and wrap around each cheese-filled pepper, securing with a toothpick.
  4. Place peppers on a baking sheet and bake at 400F for 25 minutes or until bacon is cooked through and starting to crisp up.
  5. Serve hot.
