Old Fashioned Elderberry Jelly

  1. STEM elderberries, crush well and place in a large saucepan.
  2. HEAT gently until juice begins to flow.
  3. Simmer, covered, 15 minutes.
  4. PLACE in a jelly bag or cloth and squeeze out the juice.
  5. MEASURE prepared juice into a large saucepan.
  6. Add lemon juice.
  7. ADD sugar to fruit and mix well.
  8. PLACE saucepan over high heat.
  9. Bring to a full rolling boil stirring constantly.
  10. IMMEDIATELY stir in liquid fruit pectin.
  11. Continue to stir over high heat until mixture comes to a full rolling boil.
  12. Boil hard 1 minute, stirring constantly.
  13. REMOVE from heat and skim if necessary.
  14. POUR quickly into warm, sterilized jars filling up to 1/4 inch from rim.
  15. SEAL while hot with warm sterilized 2-piece lids with new centers.
