Satay Beef Skewers

  1. Combine peanut butter, coconut milk, water, curry paste and sugar in a small saucepan over a low heat, until heated and slightly thickened.
  2. Thread beef onto skewers.
  3. Rub over the combined spring onion, ginger and oil and marinate for 20 minutes.
  4. Cook on a preheated grill plate for 5 minutes, turning whilst cooking.
  5. Serve beef skewers with satay sauce and rice.
