Grilled Peaches with Whipped Goat Cheese

  1. For whipped goat cheese, chill bowl and whisk attachment of a standing mixer for 5 minutes in the freezer.
  2. Beat cream over high speed for 12 minutes, or until stiff peaks form.
  3. Season with a pinch of salt.
  4. Transfer to bowl.
  5. Using the paddle attachment, whip goat cheese in the same bowl over medium-high speed for 30 seconds to 1 minute or until light and fluffy.
  6. Gently fold whipped cream into goat cheese in 2 additions.
  7. Taste for seasoning.
  8. Heat grill pan to medium-high to high heat.
  9. Brush peaches with oil and sprinkle lightly with salt.
  10. Grease grill with additional oil.
  11. Grill about 13 minutes per side or until charred.
  12. To serve, scoop about 1 tablespoon of goat cheese filling into hollowed out portion of peaches, drizzle with balsamic syrup and top with nuts.
  13. Enjoy.
