Sour Cream Turkey Enchiladas Recipe
- 1 doz. tortillas
- 1 can cream of chicken soup
- 1 can mushroom soup
- 1/2 c. lowfat sour cream
- 1/4 ounce. can minced chilies
- 1/2 c. minced onions
- 1/2 teaspoon salt
- 2 c. minced cooked turkey
- 2 c. grated sharp cheese
- Combine soups, lowfat sour cream, chilies and salt.
- Heat till smooth.
- Mix cheese, onion and turkey.
- Steam tortillas to soften or possibly dip in warm veg.
- oil.
- Place a portion of cheese filling across center of tortillas.
- Roll and place seam side down in greased casserole.
- Pour sauce over enchiladas.
- Sprinkle with more cheese if you like.
- Bake at 350 degrees for 40 to 45 min.
