Cajun Fettuccine

  1. In a large skillet, cook beef, salt and pepper over medium heat until no longer pink; drain and set aside.
  2. In the same skillet, saute the onions, green pepper, celery, and garlic in butter until crisp-tender.
  3. Stir in flour until blended.
  4. Return beef to the pan.
  5. Cook, uncovered, over medium heat for 15 minutes, stirring occasionally.
  6. Add 1 cup American cheese, tomatoes, milk, and Cajun seasoning.
  7. Simmer, uncovered, for 15 minutes, stirring occasionally.
  8. Add fettuccine; mix well.
  9. Transfer to a greased shallow 3-quart baking dish.
  10. Top with remaining American cheese.
  11. Sprinkle with Parmesan cheese.
  12. Bake uncovered, at 350 degrees for 15 minutes or until heated well.
