Coconut-Sweet Potato Pie

  1. Preheat oven to 400F.
  2. Mix sweet potatoes, sugar, cinnamon, salt, ginger and nutmeg in large bowl until well blended.
  3. Add eggs, milk and butter; mix well.
  4. Stir in 1/2 cup of the coconut.
  5. Pour into pastry shell.
  6. Bake 35 min.
  7. or until knife inserted in center comes out clean.
  8. Cool.
  9. Top with the whipped topping and remaining 1/2 cup coconut just before serving.
