Pecan-Pie Muffins

  1. Preheat the oven to 350F.
  2. Place paper liners in 9 muffin cups and spray with nonstick cooking spray.
  3. In a large bowl, combine the pecans, sugar, and flour.
  4. Make a well in the center of the mixture.
  5. In a separate bowl, beat the eggs until foamy.
  6. Add the melted butter and stir to combine.
  7. Pour the egg mixture into the well in the dry ingredients, stirring just until moistened.
  8. Spoon the batter into the cups, filling each two-thirds full.
  9. Bake the muffins for 20 minutes, or until a toothpick comes out clean when inserted in a muffin.
  10. Remove the muffins from the pans immediately and cool on wire racks.
