Blueberry Cottage Cheese Muffins Recipe

  1. Fork blend the cottage cheese and egg together.
  2. Add in the flour, salt, baking pwdr and sugar; stir to combine.
  3. Add in lowfat milk and stir lightly, then gently stir in the blueberries.
  4. Spoon into 10 muffin c. and bake in a preheated 425 degree oven for 15-18 min.
  5. Yield: 10 muffins, 68 calories each with sugar; 58 without.
