Cabbage Salad
- 1 each cabbage medium head, diced
- 1 each scallions, spring or green onions bunch, chopped
- 1 each ramen noodles 3 oz package
- 1/2 cup almonds blanched, slivered
- 2 tablespoons sesame seeds toasted
- 13 cup olive oil
- 3 teaspoons lemon juice
- 1 x salt and black pepper to taste
- Combine cabbage and green onions; cover and chill.
- Whisk together the olive oil, lemon juice and ramen noodle seasoning packet.
- Refrigerate until chilled.
- Break ramen noodles into small pieces; combine with toasted almonds and sesame seeds.
- Before serving, combine the cabbage mixture and noodle mixture; add dressing and toss to coat, season with salt and pepper if needed.
