New Potato Salad with Sauteed Onion Vinaigrette

  1. Heat the olive oil in a medium skillet over mediumhigh heat.
  2. Add the onions and saute until lightly golden brown.
  3. Add the shallot and garlic and cook an additional 1 minute.
  4. Remove from the heat and add the vinegar.
  5. Pour the mixture over the warm potatoes, add the parsley and stir to combine.
  6. Season with salt and pepper.
