Chakchouka

  1. Saute the onion and garlic in the olive oil until soft.
  2. Add all the remaining ingredients, except the eggs, and simmer for a minute.
  3. Make 4 indentations in the mixture and carefully break an egg into each one.
  4. Cover and cook over a low heat until the eggs are set.
