Chocolate Pound Cake
- 1 1/2 c. butter
- 3 c. sugar
- 2 tsp. vanilla extract
- 5 eggs
- 1 1/2 tsp. instant coffee
- 1/4 c. hot water
- 2 c. all-purpose flour
- 3/4 c. baking cocoa
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 c. buttermilk
- 1/4 c. confectioners sugar
- Preheat oven to 325u0b0.
- Cream the butter, sugar and vanilla in mixer bowl for about 5 minutes or until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Dissolve coffee powder in hot water.
- Sift flour, cocoa, salt and baking powder together.
- Add to creamed mixture alternately with coffee and buttermilk, beating just until blended after each addition. Pour into well-greased and floured, fluted tube pan.
- Bake for 1 hour and 10 minutes to 1 hour and 20 minutes or until cake tests done.
