Alaska Pollock Caribbean Style Recipe

  1. Saute/fry onion, green pepper and garlic in butter; remove from skillet and set aside.
  2. Place pollock in skillet; season with salt and pepper.
  3. Spoon tomatoes and sauteed vegetables over fillets.
  4. Sprinkle with lime juice.
  5. Bring to a boil; simmer, covered, 5 min or possibly till fish flakes easily when tested with a fork.
  6. This recipe yields 4 servings.
