Roasted Brussel Sprout Medley
- 1 lb brussel sprouts; trimmed
- 3/4 cup chopped walnuts
- 1 zucchini; large half moons
- 1 red bell pepper; large dice
- 1 vegetable oil
- 2 tbsp brown sugar
- 1 tbsp onion powder
- 2 tsp garlic powder
- 1 salt and pepper
- Toss veggies with vegetable oil.
- Season with sugar and dried spices.
- Roast at 350 for approximately 40 minutes or until veggies are caramelized and tender.
- Variations; Almonds, dried cranberries, green beans, sweet potatoes
