Green Onion Rice
- 4 green onions
- 1 tbsp. vegetable oil
- 1 c. long-grain white rice
- 1 1/2 c. chicken broth
- .13 tsp. salt
- 2 c. Parsley
- In 4-quart saucepot, heat vegetable oil on medium.
- Add white parts of green onion; cook 2 minutes or until golden, stirring.
- Add rice.
- Cook 1 minute, stirring.
- Add chicken broth and salt.
- Heat to boiling on high.
- Reduce heat to maintain simmer.
- Cover; simmer 25 minutes.
- Remove from heat.
- Let stand 5 minutes.
- Stir in chopped parsley and remaining green onions.
