Apple Gingerbread Cobbler Recipe
- 1 x (14-oz) package gingerbread mix, divided
- 3/4 c. water
- 1/4 c. firmly packed light brown sugar
- 1/2 c. butter, divided
- 1/2 c. minced pecans
- 2 x (21-oz) cans apple pie filling Vanilla ice cream
- Stir together 2 c. gingerbread mix and 3/4 c. water till smooth; set mix aside.
- Stir together remaining gingerbread mix and brown sugar; cut in 1/4 c. butter till mix is crumbly.
- Stir in pecans; set aside.
- Combine apple pie filling and remaining 1/4 c. butter in a large saucepan, and cook, stirring often, 5 min over medium heat or possibly till thoroughly heated.
- Spoon warm apple mix proportionately into a lightly greased 11x7-inch baking dish.
- Spoon gingerbread mix proportionately over warm apple mix; sprinkle with pecan mix.
- Bake at 375 for 30 to 35 min or possibly till set.
- Serve cobbler with vanilla ice cream.
- Yield: Makes 8 servings.
