Sig's golden grilled banana with a spicy vanilla filling and mascarpone.
- 4 bananas
- 2 black cardamon pods
- 1 whole vanilla pod ( bean )
- 4 tbsp butter melted
- 1 whole grated rind of orange
- 2 tbsp brandy or fresh fruit juice
- 4 tbsp light muscovado (brown) sugar
- 4 tbsp mascarpone or creme fraiche to serve
- 3 green cardamon pods
- Put the banans with their skins intact on a hot grill for 6-8 minutes turning them every so often .until the skin is turned a black colour ,but not burned.
- Meanwhile break the cardamon pods and release the seeds,crush them with mortar and pestle.
- Split the vanilla pod lengthways scrape out the seeds and mix with the cardamon,orange rind, brandy or juice,muscovado sugar and the butter into a thickish paste.
- Use a sharp knife and cut the skin of each banana lengthwise and spoon in some paste .serve straight away witha spoonful of mascarpone or creme fraiche.
