Apple Stuffed Guinea Fowl Recipe

  1. Preheat oven to Gas Mark 4/350F/180C.
  2. Chop pistachio nuts.
  3. Peel and finely chop onion.
  4. Quarter, core and finely chop apple.
  5. Mix together minced onion, apple, pistachios, parsley, salt and pepper.
  6. Season guinea fowl with salt and pepper.
  7. Fill guinea fowl cavity with apple mix.
  8. Place on roasting tray.
  9. Dot guinea fowl with butter.
  10. Roast for 1 1/4-1 1/2 hrs till cooked through, basting often.
  11. Serve.
  12. NOTES : Serve this delicious roast bird with mashed potatoes, green beans and glazed onions.
