Apple Stuffed Guinea Fowl Recipe
- 1/2 sm Onion
- 1 x Dessert apple
- 1 Tbsp. Shelled pistachio nuts
- 1 Tbsp. Minced parsley Salt and freshly grnd pepper A 2 lb guinea fowl
- 1 1/2 ounce Butter
- Preheat oven to Gas Mark 4/350F/180C.
- Chop pistachio nuts.
- Peel and finely chop onion.
- Quarter, core and finely chop apple.
- Mix together minced onion, apple, pistachios, parsley, salt and pepper.
- Season guinea fowl with salt and pepper.
- Fill guinea fowl cavity with apple mix.
- Place on roasting tray.
- Dot guinea fowl with butter.
- Roast for 1 1/4-1 1/2 hrs till cooked through, basting often.
- Serve.
- NOTES : Serve this delicious roast bird with mashed potatoes, green beans and glazed onions.
