Pollo Bella
- 6 chicken breasts
- 14 oz marinated artichokes
- 1 packages baby portabella mushrooms
- 4 oz scallions
- 4 roma tomatoes or sun dried tomatoes
- 1/4 cup fine diced colored peppers
- 2 quart heavy cream
- 1 cup flour
- 2 tbsp olive oil
- 2 oz chicken broth
- 2 tbsp butter
- 1 cup fresh parmisian cheeze
- 3/4 cup white wine

- Flour chicken and Heat oil in skillet and saute till brown
- Heat oil in large skillet over medium high heat.
- Flour chicken & saute until golden on both sides.
- Remove chicken & place in oven to finish cooking @ 350 for about 15 minutes or until the internal temp is 180.
- In the same pan you scared the chicken, add butter & minced garlic & cook until golden.
- Then add mushrooms & artichokes & cook for about 3-4 minutes.
- Add about a tablespoon of flour & mix well.
- Lower temp to medium/medium low & deglase with white wine then add chicken stock & cream.
- Add parmisian cheese & stir until cheese melts.
- Season & taste with salt & pepper.
- Place chicken into sauce, add peppers, diced tomatoes, & scallions on top.
- Taste for seasoning & serve hot.
