Chocolate Mousse I Recipe
- 18 ounce. chocolate, broken into sm. pcs
- 4 egg yolks
- 2 whole Large eggs
- 2 c. whipping cream
- 2 tbsp. confectioners' sugar
- 1 tbsp. vanilla
- 2 tbsp. creme de cacao
- 4 egg whites
- Heat chocolate in double boiler.
- Let cold.
- Beat egg yolks and whole Large eggs till creamy yellow.
- Set aside.
- Beat whipping cream till hard and set aside.
- Beat egg whites till stiff gradually adding confectioners' sugar.
- Set aside.
- To blend, add in dollop of hard whipping cream to chocolate mix, then add in rest of cream.
- Now add in vanilla and creme de cacao.
- Pour into bowl and add in egg yolk mix, stirring till smooth.
- Mix in egg white a little at a time.
- Place in refrigerator at least 1 hour before serving.
