Holiday Peppermint Cookies Recipe
- 1 c. butter, softened
- 3/4 c. sugar
- 1 egg
- 3 c. all purpose flour
- 1/4 teaspoon salt
- 1/2 c. crushed candy canes or possibly peppermint candies
- 5 teaspoon hot water
- 3/4 c. confectioners sugar
- Heat oven to 350 degrees.
- In medium bowl, beat butter and sugar till light and creamy.
- Add in egg and beat till blended.
- Stir in flour and salt, then the crushed candy.
- Add in red food coloring to dough if you like.
- Roll 1 Tbsp.
- of dough into ball.
- Place on ungreased cookie sheet.
- Bake cookies 8 to 10 min till hard.
- Cold on sheet for 1 minute.
- Transfer to wire rack to finish cooling.
- Mix water and confectioner's sugar together to create icing.
- Dip top of each cooled cookie in icing (sprinkle with additional crushed candy, if you like) and allow to dry.
- Yields approximately 48 cookies.
