Peanut Sauce
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 3/4 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- Juice from 1 lemon
- 1 tablespoon honey
- 1 teaspoon fish sauce
- 1/4 teaspoon cayenne pepper (optional)
- Heat the vegetable oil in a small saucepan over medium heat.
- Add the garlic and toast in the oil, stirring frequently, until fragrant and beginning to turn golden brown, about 1 minute.
- Add the peanut butter, soy sauce, rice wine vinegar, lemon juice, honey, fish sauce, and cayenne (if using).
- Whisk together until a smooth consistency is achieved.
- Add a few tablespoons of water, if necessary, to thin the sauce.
- Cool in the refrigerator for 20 minutes before serving.
