Dijon Roasted Potatoes

  1. Toss potatoes with enough vegetable oil to cover.
  2. Season with half of the dried herbs and spices, salt, and pepper.
  3. Roast at 400 approximately 40-45 minutes or until potatoes are caramelized and fork tender.
  4. Combine mayo, mustard, vinegar, and the remaining spices.
  5. Whisk to incorporate.
  6. Combine roasted potatoes, roasted peppers, jalapenos, and spinach in a large mixing bowl.
  7. Toss.
  8. Add dressing.
  9. Toss.
