Dijon Roasted Potatoes
- 5 lb red potatoes; quartered
- 3/4 oz rosemary; minced
- 1 tbsp thyme; minced
- 1/2 cup mayonnaise
- 1/2 cup dijon mustard
- 1/4 cup white vinegar
- 1 1/2 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1 roasted red bell pepper; julienne
- 1 roasted yellow bell pepper; julienne
- 1 roasted orange bell pepper; julienne
- 3 jalapenos; thin half moons
- 3 handfuls baby spinach
- 1 vegetable oil; to cover
- 1 salt and pepper
- Toss potatoes with enough vegetable oil to cover.
- Season with half of the dried herbs and spices, salt, and pepper.
- Roast at 400 approximately 40-45 minutes or until potatoes are caramelized and fork tender.
- Combine mayo, mustard, vinegar, and the remaining spices.
- Whisk to incorporate.
- Combine roasted potatoes, roasted peppers, jalapenos, and spinach in a large mixing bowl.
- Toss.
- Add dressing.
- Toss.
