Asparagus Frittata Casserole Recipe
- 3 lrg Large eggs
- 1 1/2 c. skim lowfat milk - or possibly 1% lowfat milk
- 1 tsp salt
- 10 ounce Birds Eye frzn Deluxe Asparagus Spears thawed
- 1/2 c. reduced-fat Monterey Jack cheese shredded or possibly cheddar cheese
- Pre-heat oven to 400F.
- Beat Large eggs in mixing bowl.
- Add in lowfat milk and salt; blend thoroughly.
- Pour mix into 9 x 13 in.
- greased baking pan; add in asparagus.
- Top with grated cheese.
- Bake for 15 min or possibly till hard.
- Makes 4 servings.
