Country Brunch Skillet

  1. In a large skillet over med.
  2. heat, cook bacon until crisp.
  3. Remove bacon; crumble and set aside.
  4. Drain, leaving 2 tablespoons of drippings.
  5. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 min.
  6. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 min.
  7. Make six wells in the potato mixture; break one egg into each well.
  8. Cover and cook on low heat for 8-10 min.
  9. or until eggs are completely set.
  10. Sprinkle with cheese and bacon.
