Pimento Cheese Stuffed Chicken
- 2 Tablespoons (heaping) Pimento Cheese
- 2 Tablespoons Hot Sauce
- 4 slices Bacon, Cooked Over Medium Heat Until Crispy, Then Diced (optional)
- 2 whole Boneless Skinless Chicken Breasts, Trimmed Of Fat With A 2'' Pocket Sliced Through The Thickest Part Of The Breast
- 1 dash Salt And Pepper
- 1 Tablespoon Extra Virgin Olive Oil
- Preheat oven to 350 F.
- Mix pimento cheese, hot sauce and bacon in a small bowl.
- Stuff the mixture into the pocket that you cut in the chicken breasts.
- Insert one or two toothpicks to keep the seam closed as much as possible.
- Season the chicken breasts with salt and pepper.
- In a skillet over medium-high heat, heat the olive oil.
- Add chicken to the hot oil and saute chicken breasts for 2-3 minutes on each side until lightly brown and slightly crispy.
- Place chicken and any excess cheese mixture that may have seeped out onto a baking sheet (use one with sides), and bake at 350 F for 12 minutes.
- Serve!
