Pimento Cheese Stuffed Chicken

  1. Preheat oven to 350 F.
  2. Mix pimento cheese, hot sauce and bacon in a small bowl.
  3. Stuff the mixture into the pocket that you cut in the chicken breasts.
  4. Insert one or two toothpicks to keep the seam closed as much as possible.
  5. Season the chicken breasts with salt and pepper.
  6. In a skillet over medium-high heat, heat the olive oil.
  7. Add chicken to the hot oil and saute chicken breasts for 2-3 minutes on each side until lightly brown and slightly crispy.
  8. Place chicken and any excess cheese mixture that may have seeped out onto a baking sheet (use one with sides), and bake at 350 F for 12 minutes.
  9. Serve!
