Cauliflower Mashed Potatoes
- 1 head of fresh cauliflower
- 14 cup of low fat margarine or 14 cup butter
- 4 ounces low-fat cream cheese
- 2 tablespoons of minced garlic
- 2 tablespoons of chopped chives
- 34 cup parmesan cheese
- salt and pepper
- Steam the cauliflower in a bit of water until it gets really soft and mushy.
- Put the cauliflower minus the stem part into a large mixing bowl.
- Add the rest of the ingredients.
- Beat with a hand mixer until you get the consistency of creamy mashed potatoes.
- Serve immediately.
- Leftovers may be reheated in the in the microwave and taste just as good if not better the next day!
