Pork and Apple Stew
- 2 lbs pork shoulder, cut into cubes
- 3 tablespoons flour
- 1 teaspoon ginger
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon seasoning salt
- 1 teaspoon pepper
- 3 tablespoons olive oil
- 1 onion, cut into wedges
- 2 stalks celery
- 1 cup mushroom, sliced
- 3 carrots, cut into large chunks
- 4 apples, cored and cut into large chunks
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 2 tablespoons brown sugar
- 2 tablespoons butter
- 2 -3 cups apple juice
- 3 tablespoons balsamic vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- Put top 7 ingredients into a zip lock or container with lid and shake until meat is completely coated.
- Heat 2 Tbsp Oil in large skillet and sear coated meat.
- Place meat into roasting pan or braising dish with carrots.
- Add leftover oil to skillet and saute onion, celery and mushrooms add to meat.
- Put butter, apples,cinnamon,ginger, and brown sugar into skillet and saute until sugar is dissolved and apples are well coated add 2 cups apple juice and balsamic vinegar reduce a few minutes.
- Pour over meat mixture and add more apple juice if needed.
- Preheat Oven to 300 degrees.
- Braise covered for 1.5 - 2 hours.
- (if needed) Mix cornstarch and water together and add to pot 15 minutes before finished cooking to thicken sauce.
- Served over rice.
