Wasabi Snack Mix
- 1 1/2 cup sugar
- 6 cup unsalted peanuts
- 1/4 cup (1/2 stick) unsalted butter
- 3 tbsp wasabi paste
- 2 tbsp coarse salt
- 3 cup wasabi peas
- 2 cup mini Asian rice crackers
- 2/3 cup water
- Preheat oven to 350F.
- Line a baking sheet with aluminum foil or parchment paper and butter the foil or parchment.
- Combine the sugar and water in a medium saucepan over medium heat.
- Bring to a boil, stirring to dissolve the sugar.
- Boil without stirring for 5 minutes and remove the pan from the heat.
- Add the peanuts and let stand 5 minutes, stirring often.
- Drain the peanuts and return them to the saucepan.
- Stir in the wasabi paste and salt.
- Then spread the peanuts in an even layer on the prepared pan.
- Bake for 15 minutes, stirring twice, until golden brown.
- Cool completely in the pan, then toss with wasabi peas and crackers.
