Onion Rice

  1. In a medium saucepan over medium-high heat, combine rice, broth, and salt and bring to a boil.
  2. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes.
  3. Remove from heat.
  4. In a small skillet over medium heat, melt butter.
  5. Add onion and saute until tender, about 5 minutes.
  6. Stir into rice.
  7. Add parsley and fluff with a fork before serving.
