Sausage Lasagna
- 1/2 (1 lb.) pkg. lasagna
- 1 lb. round smoked sausage, cut in 1/2-inch slices
- 1 medium onion, chopped
- 1 medium carrot, grated
- 1 (15 oz.) can tomato sauce
- 1 (12 oz.) can tomato paste
- 1/2 c. water
- 1 tsp. salt
- 1 tsp. basil leaves
- 1 tsp. fennel seed
- 1/4 tsp. pepper
- 1 (15 oz.) container Ricotta cheese
- 1 egg, beaten
- 1/2 tsp. salt
- 1/2 c. grated Parmesan cheese
- 1 (8 oz.) pkg. grated Mozzarella cheese
- Prepare lasagna according to package directions.
- Drain.
- In large skillet, cook sausage, onion and carrot, until onion is tender.
- Add tomato sauce, tomato paste, water, 1 teaspoon salt, basil, fennel and pepper.
- Simmer 20 minutes.
- Blend together Ricotta, egg and salt.
