Chocolate Caramel Muffins (Surprise)
- 2 cups self raising flour
- 12 cup caster sugar
- 12 cup pecans, finely chopped
- 100 g dark chocolate, grated
- 23 cup milk
- 125 g butter, melted
- 1 egg, lightly beaten
- 6 jersey caramels, cut in half
- Preheat the oven to moderate, about 180c.
- Lightly grease a 12 hole muffin pan.
- Sift flour into a large bowl, and stir pecans and chocolate.
- In a jug/bowl, whisk the milk butter and egg together.
- Make a centre in the flour mixture add the milk mixture all at once, and mix lightly until combined ~ and please dont overmix!
- Spoon enough mixture into each of the muffin holes ~ only to half fill and.
- top each with a half caramel and cover evenly with the remaining muffin mixture.
- Bake for 20 - 25 minutes or until a skewer comes out clean and dry when inserted into centre of muffin.
- Transfer to wire rack and cool.
