Lemon Cheesecake Squares
- 1 cup butter, softened
- 2-1/2 qt. yellow cake mix
- 3 qt. cold milk
- 2/3 cup lemon juice
- 1 pkg. JELL-O Brand Cheesecake Filling Mix
- 1 tsp. grated lemon zest
- Place butter and cake mix in mixer bowl fitted with paddle attachment.
- Beat with electric mixer on low speed 3 minutes.
- Press evenly and firmly onto bottom of greased full size sheet pan (or half sheet pan for trial recipe).
- Bake in 350F-standard oven for 10 to 15 minutes or until lightly browned.
- Cool completely on wire rack.
- Pour milk and lemon juice into large mixer bowl fitted with wire whip attachment.
- Add cheesecake mix and lemon zest.
- Beat on low speed 30 seconds; scrape bowl.
- Beat on medium speed 2 minutes.
- (Do not overbeat.)
- Pour over crusts.
- Refrigerate at least 1 hour.
- Cut into 64 squares to serve (or 32 squares for trial recipe).
