Lemon Cheesecake Squares

  1. Place butter and cake mix in mixer bowl fitted with paddle attachment.
  2. Beat with electric mixer on low speed 3 minutes.
  3. Press evenly and firmly onto bottom of greased full size sheet pan (or half sheet pan for trial recipe).
  4. Bake in 350F-standard oven for 10 to 15 minutes or until lightly browned.
  5. Cool completely on wire rack.
  6. Pour milk and lemon juice into large mixer bowl fitted with wire whip attachment.
  7. Add cheesecake mix and lemon zest.
  8. Beat on low speed 30 seconds; scrape bowl.
  9. Beat on medium speed 2 minutes.
  10. (Do not overbeat.)
  11. Pour over crusts.
  12. Refrigerate at least 1 hour.
  13. Cut into 64 squares to serve (or 32 squares for trial recipe).
