Slow-Roasted Pork with Lime Mojo

  1. Rub 3 tablespoons Latin Spice Mix all over pork.
  2. Place pork in large resealable plastic bag.
  3. Add 2 cups Lime Mojo.
  4. Close bag and refrigerate pork overnight.
  5. Cover remaining Lime Mojo and refrigerate.
  6. Preheat oven to 450F.
  7. Discard marinade from pork.
  8. Place pork on rack in large roasting pan.
  9. Roast 30 minutes.
  10. Reduce oven temperature to 300F and roast until thermometer inserted into center of pork registers 150F, about 45 minutes.
  11. Transfer pork to cutting board.
  12. Tent with foil; let stand 15 minutes.
  13. Cut pork into 1/2-inch-thick slices.
  14. Spoon reserved Lime Mojo over pork.
