Juicee J's three cheese quiche
- 1 cup sliced, fresh mushrooms
- 1 cup each/chopped onions, & fresh broccoli
- 5 eggs
- 2/3 cup milk
- 1/4 cup chopped red pepper
- 1 cup shredded three cheese(Kraft has a one with a touch of Philadelphia cream cheese in it/so good in this)
- 1 frozen deep dish pie crust (9 inch), unbaked
- preheat oven to 375F
- cook mushrooms, onions, broccoli, & peppers in a splash of olive oil, .
- or a skillet sprayed with cooking spray on medium heat for 5 minutes, or until tender.
- stirring occasionally, remove from heat
- beat eggs& milk with wire whisk until blended.
- stir in veggie mixture, peppers, (roast peppers 1st, or add them with the other veggies in the skillet) I prefer roasted peppers myself..
- add the cheese to that mixture, then pour into unbaked pie crust.
- place on a baking sheet.
- bake for 35 minutes.
- top with remaining cheese, then bake an additional 5 to 10 minutes, or until knife inserted into center comes out clean.
- let stand 10 minutes before serving.
