Melon Granita

  1. Cut open the melons.
  2. Peel and remove the seeds.
  3. Cut the flesh into pieces and blend in the food processorwith the lemon juice, sugar, and orange-blossom waterto a liquid pulp.
  4. You should have about 6 cups.
  5. The amount of sugar depends on how sweet the melons are.
  6. Continue following the basic method (page 423).
